Herbal jelly sweets
Herbal jelly sweets (recipe by Dawn Ireland)
155g elderberries (alternatives include: a mixture of blueberries, blackberries and add either Echinacea or Elderberry tincture to add the antiviral properties, or apple and pear)
5g each of dried herbs: elderflowers, coltsfoot, thyme (alternatives include: ground ginger (1 tsp), ground cinnamon (1 tsp), chamomile (5g), eyebright (5g)
Boil up for 10 minutes.
Press juice and strain.
For every 200ml juice add the following:
25ml of herbal tincture (I used 5ml ginger, 10ml mullein, 10ml liquorice) (alternatives include: Echinacea, elderberry, elderflower, eyebright, thyme, chamomile, coltsfoot, elecampane)
2 heaped teaspoons agar agar flakes (natural thickener from red seaweeds)
20g sugar (or honey)
Heat well, stir continuously whilst agar flakes dissolve as you bring to the boil.
Once melted pour into silicon sweet or chocolate moulds. Cool and store in fridge in an airtight container.
